Happy Birthday Daisy Mae!

Today is my first baby girl Daisy Mae's birthday! Daisy is my childhood dog that lives back in Charlotte with my daddy.  As I had mentioned in this post, when I was little I wanted a dog for years and finally when I was in sixth grade my dad gave in and decided to get me a dog for Christmas.  I will never forget that day, we drove down to the Union County animal shelter and we spotted this precious brown eyed puppy and it was instant love.  From that day on Daisy Mae and I were inseparable!  I have so many wonderful memories with   Daisy, so when the time came for me to move out and get married it was beyond difficult.  I remember multiple times during the months before the wedding where I would just sit and cry thinking about having to leave her.  Why didn't I bring her with me you ask?  Well my dad lives on 100 acres and that's all she has ever known, so to take her away from that and move her into a small one bedroom apartment just didn't seem right.  Plus don't be fooled I wasn't the only one slightly attached to Daisy, my Dad was too so I couldn't have him lose both is girls.  So Daisy stayed back with my Dad and she is still happy on the farm, where she is loved on by my dad and all of our neighbors, she is kind of like the neighborhood dog!
So I just wanted to take the time to wish my little girl a happy birthday, I cannot believe she is 15!  Daisy will always be my first baby girl! We love you hound dog!

Birthday weekend and randomness!

Sorry for being MIA for the past week.  My nursing license is up for renewal at the end of this month and NC requires you complete 30 hours of continuing education and guess who saved it for the very last minute? This girl!!! So between completing all those and just normal life things I have been a little preoccupied.

So anyways I'm back and just wanted to document and share my awesome weekend!  I really have to brag on my friends and family they went above and beyond to make me feel special and I am so grateful!
It all started last Wednesday our small group cooked me a delicious bday dinner followed by a bottle of prosecco(my fave) that we shared, and then Slutty brownies! Oh my goodness have you seen these? They are all over Pinterest! Its basically a layer of cookie dough, a layer of Oreos, the covered with a layer of brownie batter then you bake it and HALLELUJAH!! Seriously I heard angels singing in the heavens upon my first bite!!! These may be the reason I have gained a few Lb's *sigh* more on that in another post.
The next day (Thursday) two of my closest friends April and Allison who are also members of our small group, took me out for a day of fun (seriously these girls are to good to me).  First we stopped at Chick Fil a, where I was treated to lunch.  Ok so here is another random fact about me: I LOVE Chick Fil a, it is my love language.  Oh you thought there were only five love languages, nope there is a sixth and it is Chick Fil a!  So we ate a yummy lunch and then we headed to Marbles a children's museum here in Raleigh.  We did have a kid in tow, my friend April has a 10 month old little boy Malachi, however this museum was so fun I would go without a kid haha!  I had such a blast playing with my favorite little fella and chatting it up with two wonderful girls.  It was an great afternoon, thank you so much girls!

Then the fun continued Friday!! My cousin Jordan came to visit for the weekend!!! Now her visit alone would have been enough, however the hubs and her had some surprises up there sleeves!  First things first she  arrives with Costco cake!!! Ummmm if you don't know about Costoco cake then you need to give it a try, it is AMAZING and inexpensive.  However it comes in one size: ginormous so it feeds a ton.  Needless to say my fridge might be full of Costco cake and I am unsuccessfully trying not to eat multiple pieces a day, not really helping the weight loss plan. Hey there is always next week!  So Jordan arrived super late Friday evening so we chatted a while and then hit the sack.  Saturday morning I awake to the hubs and Jordan getting busy in the kitchen making me breakfast complete with Mimosa's, once again I love prosecco!  After we stuffed our bellies and relaxed a while we headed to a local park and took the pup on a long stroll.  The rest of the day we napped and watched football.  Then I was told to be ready at 6:30, we hopped in the care, I still had no idea where we were heading.  Then we pull up outside my favorite restaurant in the whole wide world The Pit!! Oh my goodness this place will knock your socks off!  We feasted on BBQ fries, hush puppies, Mac and Cheese, fried okra and not to mention BBQ!!!  Once we were so stuffed we could barely move we headed home to open up presents and eat cake, yes I was full but I have a separate stomach for dessert and I am never to full for Costco cake!

So basically my birthday was awesome!! I cannot thank everyone who helped make it so special enough!
Especially my husband and Jordan, thank you so much for everything you did this weekend, it meant the world!

So yeah that was kind of long, hopefully you are still with me.  I know most of you don't care about my birthday weekend but I wanted to document it for my own personal memory.

On another exciting note it is officially FALL!  I broke out my very large tiny collection of fall decor today and it makes me so excited.  I currently have a pumpkin spice candle burning and cannot wait to make a batch of my pumpkin bread in the coming weeks, don't worry I will be sure to share!


So that's it for now, I'm back and hopefully will be writing more regular posts, I have a super exciting weekend coming up, so I will share more on that next week! Oh yeah and the season premiers of Grey's and Private Practice are this week woop woop!!!

26 random facts on my 26th birthday

Today is my 26th birthday, so I thought for fun I would post 26 random facts about me.  These are truly random, but hopefully they let you guys learn a little more about me.  Hopefully my weirdness doesn't scare you away. So here goes!

1) I was born crossed eyed. I had to have surgery and then wear a patch for a few months followed by some awesome giant pink glasses. I cannot believe I am going to do this but here is a pic of me in said "giant pink glasses" I think I was about 2 in this pick and that's Jordan (see #11)

2 )My Mom named me Tessa with the intent of everyone calling me Tess but that never happened, so feel free to call me Tess if you want.
3) I truly believe there is no dessert out there that is to rich for me, and I challenge anyone to find one that is, I am a true chocoholic.
4) I have this odd phobia of jarred things.  Allow me to explain: you know the jarred peppers that are always on the table at Steak and Shake, they thoroughly gross me out and I cannot eat unless they are out of sight.  So any jarred thing like that makes me gag.
5) I love good old gangsta rap.
6) I equally enjoy some classic Celine Dion, kind of embarrassing.
7) My first plane ride wasn't until I was in my twenties.
8) Dogs are my favorite animal, I know shocking.
9) I am a DADDY'S GIRL!
10) I went to UNCG for a year and a half and then transferred back home to UNCC because I was homesick, see #9.
11) I dont't have a sister but my cousin Jordan and I are so close I consider her my sister.
12) I think Diet Coke and Cheez-its together are delicious.  Its kind of like a nice red wine and a good steak, a perfect pair.
13) When I was in 6th grade I wanted a dog so bad that I carried around a stuffed dog pretending to "walk" and "feed" it so I could prove to my dad I was responsible. His name was Rosco and it worked we adopted my first baby girl Daisy later that year!
14) Michael and I were baptized in August 2008 just before our wedding, and it was the beginning of our new lives putting Christ at the center of everything. It has changed us in the most amazing way.
15) I have to sleep with two pillows: one for my head and the other in between my legs.  Michael and I refer to them and "H.P"(head pillow) and "L.P"(leg pillow)
16) I am ridiculously hot natured especially at night, it is frigid in our house during the night, so if you ever sleep over bring your Long Johns.
17) I have to have some kind of dessert after every meal (see #3).
18) I love the Duggar's!!!!
19) Football is my happy place. I would rather watch it than any other thing in the world.  I dream of one day having a daughter just like the little girl on "Remember the Titans" you know the assistant coach's daughter who knows more about football than the average man, I think that would be awesome.
20) I have seen every episode of Grey's Anatomy at least 3 times, and now thanks to Netflix I can watch them whenever I want!!
21) I like to read any book, article, medical journal, text book, etc about Child birth.  I find it fascinating! Then again I am an OB nurse.
22) I have about a hundred pair of my own sweat pants but I prefer to wear my husbands, sexy I know!
23) My first car when I was 16 was a white 1992 Honda Accord with manual transmission, I named her Honda girl and I am happy to say I still drive her today!! 234,00 miles and still going strong!
24) The only way I can eat bananas is with peanut butter on them.
25) This is so random and maybe strange but here it is: whenever I am at a public trail/park and a jogger/runner runs by me I have to hold my breath because I am afraid of getting a whiff of body odor. Sad but true.
26) Before the Panthers came to Charlotte I was a 49ers fan and I looooovvved Jerry Rice!  This is when my football obsession truly began.

Why I love fall and a recipe!

I don't know about you guys but here in NC the temps are starting to get a little cooler and it is making me so giddy for fall!  Fall is my favorite season and for so many reasons.  First off let me just get this out there, I'm not a summer person......Gasp! I know, I know, I mean I love the idea of summer the beautiful white sand beach and the sparkling pool. But honestly the beach is HOT and humid and you get all sticky and sandy, yuck and well laying by the pool looks glamorous but for me I am just sweating my butt off so I only enjoy it if I am in the pool.  Don't get me wrong I do love summer for the fact that it is light outside until 9pm and that everyone is out and about oh yeah and vacations.  But other than those things I am just not a big fan of summer, I hate and I repeat hate hot weather and humidity.  I am just not one of those girls that can look cute when it is 95 degrees with 95% humidity and honestly it is miserable for me to try.  I sweat.... like a man  yup I just admitted that, but it's true.  You can ask my husband, every time we would step out our front door this summer I would almost instantly utter some phrase like "ugh it is so freakin hot" "ugh fall please come soon" etc.  So yeah I'm not a huge summer fan, so the fact that fall is right around the corner makes me beyond excited! Onto the many reasons I love fall:


  • The cooler weather, duh!
  • Football
  • pumpkin scented candles
  • pumpkin bread
  • well pretty much anything pumpkin
  • my birthday ;)
  • The NC state fair, hello deep fried snickers!
  • Yummy soups and chilis in the crock pot.
  • Fall leaves, they are amazing here in NC.
  • Corn mazes and pumpkin patches. 
  • Fall decor, which I will be busting out soon!
And the list could go on and on.  So in honor of fall being just around the corner I will share with you the recipe to a crock pot chicken chili I made this past Sunday.  I have been making this since we got married and honestly I cannot remember where I found it. So here it is:

Ingredients:
1 can dark red kidney beans, rinsed and drained
1 can light red kidney beans, rinsed and drained
1 1/2 cups thick and chunky salsa
1 can tomato sauce
2 tbsp. chili powder
1 1/2 lb. boneless skinless chicken breast cut into bite sized pieces.
1 onion, chopped
1 cup frozen corn
1 cup shredded cheese.

Combine beans, salsa, tomato sauce and chili powder in slow cooker.  Top with chicken, onions and corn (do not stir). cover and cook on low for 6-8 hours (or high for 4-5 hours)

Serve topped with shredded cheese and any other toppings you like.  We like sour cream and fritos if we have them on hand!

My best friend's wedding!

So here is the promised post of Shannon's wedding weekend! Let me just start by saying it was such and AMAZING weekend and such an honor to be a part of Shannon and Robert's wedding day.  They are such beautiful people and are perfect for each other, you could just feel all the love and joy throughout the weekend!

So the weekend started on Friday Michael and I got up early to drive to Charlotte and drop Bella off at my Mom's where she stayed for the weekend, and don't worry my mom spoils Bella just as much if not more than we do so lets just say she didn't miss us one bit!

Once we dropped Bella off we headed to Winston-Salem which is where all the wedding festivities would take place! When we arrived in Winston we checked into our hotel and quickly showered and got ready for the rehearsal dinner.  Both Michael and I were super excited about the rehearsal dinner because it was being held on the Wake Forest campus(Michael graduated from Wake) and we love any excuse to go back and visit, we have so many memories there!
The rehearsal dinner was beautiful and delicious and it was so nice to share the evening with so many people that love Robert and Shannon as much as we do!
The hubs is happy to be back in Demon Deacon land!

Fun fact about the groom, Robert hiked the Appalachian trail hence the AT cake. Oh yeah and he biked across the U.S you know no big deal! Ha!





After the dinner we headed back to our hotel to change into some more comfy clothes and get ready for the bonfire that was planned!  We also picked up my cousin Jordan who had just arrived and was staying with us at the hotel.  I could do a whole other post about Jordan and how much fun we have when we are together, she is basically my sister and we do nothing but cut up the entire time we are together so lets just say she doubles the fun!  Anyways we changed, picked up Jordan and headed to the bonfire.
A little side note about Shannon and Robert's wedding, their ceremony was held at a place called the The Children's home.  This is an amazing organization that helps children in need in the area, it is a huge piece of land with lodging and even farm animals that the children can come stay and have a blast!  So this bonfire was at the children's home and it was so much fun, we chatted laughed and stuffed our faces with s'mores(well at least I did).  When the festivities started to wind down we headed back to the hotel to get some rest before the big day!

Saturday morning we woke up grabbed some breakfast and quickly got ready, then headed over the wedding venue to help with last minute details and to see my beautiful Shannon!  When we arrived I headed back to the room where Shannon was getting ready and y'all she seriously blew me away! The tears immediately started flowing, she was the most beautiful bride I have ever seen!!!!!!
We spent the next couple hours finalizing details, flowers etc.  Before I knew it we were thirty minutes til the ceremony and I quickly took my place at the front of the chapel and started greeting guests and handing out programs.

Lets get married!!!

The ceremony was beautiful, lets just say I shed more than a few tears!  Yes I cried a ton this weekend, it is just so overwhelming to me that Shannon and I are both married!  It seems just yesterday we where sitting in her bedroom surrounded by *Nsync posters planning our weddings with Justin Timberlake, and now here we are living the real deal, all grown up!! Ok enough nostalgia! So yeah like I said the ceremony was beautiful! I think weddings are so awesome not just for the couple getting married but for other married couples.  It reminds you of the covenant you made with your spouse and with God and what an amazing blessing marriage truly is!

 So after the ceremony Jordan, Michael and I helped my mother in law pack up all the flowers and clean up the chapel and then we headed to the reception, it was time to par-tay!!!
The reception was a BLAST!!!!! The food was awesome, it was all middle eastern food and it was yummy!!! Funny side note: Shannon has lived all over the world, her dad was in the Navy so they spent some time living in Saudi Arabia.  So Shannon's family grew up eating all kinds of middle eastern dishes.  I remember in High School Shannon use to bring hummus for lunch and this was way before hummus gained its popularity in the US and we used to laugh at her all the time hahaha, what can I say she is a trend setter! Back to the reception, we ate and then the dancing started, and it didn't stop until the very last song! Even my nephew Nicholas who is only 19 months was killing it on the dance floor.  We had such a blast at the reception, it was honestly the most fun wedding I have ever been to!

The next day there was one more event planned, a cook out back at the Children's home!  We feasted on yummy BBQ and fixins and got to chat with the newly weds!  We also got to visit with many different farm animals including: pigs, goats, donkeys, horses, a lama, and my fave a baby cow!!!  This was pure heaven for me, I LOVE animals.  I even got to pet and snuggle the baby cow, I know this is going to sound lame but it was one of the coolest things I have ever done and I was seriously trying to figure out how I could get this baby cow into the car so I could take him home.  I mean wouldn't Bella love a cow for a brother? I think so!

After the cook out we bid the Newlyweds farewell and we loaded up and headed back to Charlotte to pick up our furry little girl who was way to busy having fun to miss us but let me tell you I missed her terribly! After picking up Bee Bop we got to spend Sunday and Monday relaxing with my Dad aka Pop's and eating tons of healthy unhealthy food! Monday evening we headed back home and back to reality.
It was such an amazing weekend!! Shannon and Robert thank you so much for allowing us to be a part of your big day, it was beautiful and so so so much fun!  We love you both more than you will ever know and wish you many many years of happiness!  Please know that we are here to support and love you guys always!

Here in the Roman household we LOVE football! We love college and NFL equally, I am a Carolina fan to the end and my husband is a demon deacon, they played each other today and lets just say I don't want to talk about it ha ha! When it comes to the NFL we are die hard Carolina Panthers fans, I mean we grew up in Charlotte, NC so who else would we pull for! Unfortunately the Panthers don't have the best following but watch if we have a good season you will see all the bandwagon fans jumping back on the wagon grrrrr! However my husband and I have loved the panthers from the beginning through every losing season. We are so excited about this season the panthers are definitely moving in the right direction and we cannot wait to see the boys tear it up on the field this season!!! Today is their first game against the Buccaneers and I am giddy with excitement! Yay for football and GO PANTHERS!!!!!!!!!!!!

Bachelorette Weekend!

My best friend Shannon got married this past weekend and it was incredible!  But that is whole other post I will be sharing soon!  Today I am going to share her Bachelorette party which was the weekend before the wedding..

First let me tell you a little about my bff Shannon! You might remember me mentioning her in this post, she is the girl I met in 8th grade and quickly hit it off over our shared love for Justin Timberlake and all things *Nsync and who would eventually introduce me to my future husband. I can easily say that Shannon is still one of my best friends today!  She is kind, loving, giving and just an amazing person all around!   I really look to her as a spiritual mentor, I truly value her view on faith, love and spirituality and I think she has such a great perspective on life! I truly am honored to call her my friend.  There are so many more things I could say about her, but that would take forever and its time to get on to the awesome night we had celebrating the beautiful bride to be!

So that night I drove to Winston-Salem to celebrate my best friend's upcoming nuptials! First we went to one of her favorite restaurants for some yummy dinner and drinks, and then the plan was to hit up some local bars.

  However when we got home from dinner we popped in the Justin Timberlake "Future sex love sound" concert DVD and well we got a little distracted!  As I had mentioned before Shannon and I have been obsessed with JT since we were in the 8th grade so it made perfect since that this is how we would spend her bachelortte party, glued to a tv swooning over Justin oh yeah and playing a little drinking Jenga!  BTW ladies if you love JT you NEED to check out this concert it was beyond entertaining it had me giddy like a little 12 year old girl again!

So after the concert wrapped up we decided to walk down to the bars I mean its not a bachelortte party if you cant walk in a bar with a veil and tiara and get a few free drinks right?  So that's what we did, met some very fun/interesting people, I heard the most interesting pick up line I have ever heard.  It went something like this: "hi, your shoes are really nice. I noticed them when you walked in, they are really shiny".....and that was it. hahaha
After the bars all closed we headed to get some pizza.  If you have ever been to Winston-Salem you know that after the bars close there is only one place to go and that is Burke street pizza!  My husband graduated from Wake Forest which is in Winston-Salem, so I have eaten many slices of pizza from Burke street over the years!

The weekend was filled with food, drinks, laughing until our bellies hurt and most of all the privilege of celebrating the bride to be! Next up Shannon and Roberts beautiful wedding weekend!

We moved!

So I am slowly getting back into the swing of things after our move which I am embarrassed to say was over 3 weeks ago.  Its been a busy past few weeks between settling into our new apartment and some other events that I will be blogging about soon, so stay tuned!
So like I said we moved about three weeks ago, not very far(actually just a few buildings down) but it was still exhausting.  Luckily we could start moving into our new apartment on a Thursday but still had our old apartment until the following Wednesday so we made it a gradual process.  Thursday and Friday I moved a lot of our small things, I'm pretty sure I made a million trips between the two apartments over those two days ugh! Saturday we moved all of our big stuff, thanks to help from some awesome friends this process was quick and relatively easy.
Overall everything went smooth and I have to say we LOVE our new apartment.  Honestly I thought downsizing from a two bedroom to a one bedroom would stink, but it has been great.  Our new apartment feels cozy and warm and we really love the new layout.  We thought we were going to have to store our extra furniture in a storage unit which was going to be another expense we didn't need but the Lord definitely stepped in and provided another option, it turns out my sis in law's boyfriend was moving to our area and needed some furniture for his new apartment while he saves money to buy his own stuff and guess who had some?  Yep us! So that worked out perfect!  So overall we are loving our new apartment and I was telling Michael I am kind of sad we are only going to be in it for a few months!
Oh and how is Bella adjusting to our new place?  Well lets just say she loves as much as we do!  We get tons of sun so Bella now has a new routine, she sunbathes in the living room all morning until the sun is gone and then she moves to the porch to catch some more rays in the afternoon hahaha!
