Why I love fall and a recipe!

I don't know about you guys but here in NC the temps are starting to get a little cooler and it is making me so giddy for fall!  Fall is my favorite season and for so many reasons.  First off let me just get this out there, I'm not a summer person......Gasp! I know, I know, I mean I love the idea of summer the beautiful white sand beach and the sparkling pool. But honestly the beach is HOT and humid and you get all sticky and sandy, yuck and well laying by the pool looks glamorous but for me I am just sweating my butt off so I only enjoy it if I am in the pool.  Don't get me wrong I do love summer for the fact that it is light outside until 9pm and that everyone is out and about oh yeah and vacations.  But other than those things I am just not a big fan of summer, I hate and I repeat hate hot weather and humidity.  I am just not one of those girls that can look cute when it is 95 degrees with 95% humidity and honestly it is miserable for me to try.  I sweat.... like a man  yup I just admitted that, but it's true.  You can ask my husband, every time we would step out our front door this summer I would almost instantly utter some phrase like "ugh it is so freakin hot" "ugh fall please come soon" etc.  So yeah I'm not a huge summer fan, so the fact that fall is right around the corner makes me beyond excited! Onto the many reasons I love fall:


  • The cooler weather, duh!
  • Football
  • pumpkin scented candles
  • pumpkin bread
  • well pretty much anything pumpkin
  • my birthday ;)
  • The NC state fair, hello deep fried snickers!
  • Yummy soups and chilis in the crock pot.
  • Fall leaves, they are amazing here in NC.
  • Corn mazes and pumpkin patches. 
  • Fall decor, which I will be busting out soon!
And the list could go on and on.  So in honor of fall being just around the corner I will share with you the recipe to a crock pot chicken chili I made this past Sunday.  I have been making this since we got married and honestly I cannot remember where I found it. So here it is:

Ingredients:
1 can dark red kidney beans, rinsed and drained
1 can light red kidney beans, rinsed and drained
1 1/2 cups thick and chunky salsa
1 can tomato sauce
2 tbsp. chili powder
1 1/2 lb. boneless skinless chicken breast cut into bite sized pieces.
1 onion, chopped
1 cup frozen corn
1 cup shredded cheese.

Combine beans, salsa, tomato sauce and chili powder in slow cooker.  Top with chicken, onions and corn (do not stir). cover and cook on low for 6-8 hours (or high for 4-5 hours)

Serve topped with shredded cheese and any other toppings you like.  We like sour cream and fritos if we have them on hand!
